VINIFICATION: The whole process is run at a controlled temperature, from maceration to the soft pressing until fermentation and maturation with peaks of 3°C
RAISING SYSTEM: Espalier raised with a spurred cordon
HARVESTING TECHNIQUE: Ripe grapes are harvested by hand in the second half of October
REFINING: Refining is stainless steel and in bottle, for at least four months
